Our Story

Rooted in heritage,
refined by craft

Maqam was born from a simple conviction: halal cuisine deserves the same reverence and artistry as any fine dining tradition. Our kitchen honours centuries-old recipes passed through generations, reimagined with modern technique and the finest seasonal ingredients.

"Every dish tells a story of place and memory, from the spice markets of Marrakech to the coastal kitchens of Yemen."

Lamb Tagine

"My grandmother's recipe. Twelve hours over olive wood, preserved lemons she cured in clay jars, hand-rolled couscous on a wooden tray. The first dish I learned to make. I was six."

Saffron Risotto

"An accidental marriage of Lombard technique and Persian heritage, born during my apprenticeship in Milan. Saffron threads steeped overnight, finished with brown butter and toasted pistachio."
